Breakfast Chicken Sandwich


This recipe uses your plant-based mushroom chicken to create a savoury, crispy, and hearty breakfast sandwich, served on a fluffy, cheesy biscuit with a sunny-side-up egg and fresh greens.

Ingredients:

  • 4 pieces of Better Patty Chicken
  • 4 large Biscuits (Cheddar Biscuits recommended, homemade or store-bought)
  • 4 large eggs
  • 4 slices of plant-based cheddar cheese (optional)
  • 1 cup fresh spinach or arugula
  • Hot sauce, maple syrup, or a creamy aioli (for serving)

Instructions

Heat the Better Patty Chicken

  1. Air Fryer Method (Recommended for Crispiness): Preheat to 400°F (200°C). Cook the frozen Better Patty chicken for 8–10 minutes, flipping halfway, until crispy and heated through.
  2. Oven Method: Preheat oven to 425°F (220°C). Place chicken on a baking sheet and cook for 12–15 minutes, flipping once.

Prep the Eggs and Biscuits

  1. While the chicken cooks, slice the biscuits in half horizontally.
  2. Toast or warm the biscuits slightly. If using cheese, place one slice on the bottom half of each biscuit.
  3. In a separate skillet, cook the 4 eggs to your preferred style (sunny-side-up is recommended for the photo-ready runny yolk!). Season lightly.

Assemble and Serve

  1. Lay the bottom half of the warmed biscuit on your plate.
  2. Layer a generous handful of fresh spinach or arugula on top of the biscuit.
  3. Place one piece of the hot, crispy Better Patty chicken on the greens.
  4. Carefully slide the cooked egg on top of the chicken.
  5. Finish with your favourite sauce: hot sauce for heat, maple syrup for sweetness, or a squeeze of aioli for richness.
  6. Cap the sandwich with the top half of the biscuit and enjoy your incredibly fast, filling, and flavorful breakfast!
