Korean BBQ Chicken Bowls

Ingredients:

For the Korean BBQ Better Patty

  • 4 Better Patty Chicken fillets 

  • 1 Tbsp vegetable oil (for sauce)

  • 2 cloves garlic, minced

  • 1 Tbsp fresh ginger, grated

  • 1/4 cup soy sauce or tamari

  • 2 Tbsp gochujang (Korean chili paste – adjust to your spice preference)

  • 2 Tbsp maple syrup or brown sugar

  • 1 Tbsp rice vinegar

  • 1 tsp sesame oil

For the Bowls

  • 2 cups cooked white rice (Basmati or Jasmine recommended)

  • 1 cup shredded lettuce (e.g., romaine or butter lettuce)

  • 1 cup sliced cucumber

  • 1 cup cherry tomatoes, halved

  • 1/2 cup thinly sliced red onion

  • 1/2 cup shredded carrots

  • 1 avocado, sliced

  • Sesame seeds (black and/or white) for garnish

  • Chopped green onions (for garnish)

Instructions

Prepare and Cut the Better Patty

  1. Heat: Cook the frozen Better Patties in your air fryer or oven until hot and crispy (about 8-10 minutes at 400°F/200°C).
  2. Cut: Once heated, let them cool slightly, then cut each patty into bite-sized “nuggets” or chunks. Set aside.

Make the Korean BBQ Sauce

  1. Sauté Aromatics: In a medium saucepan or deep skillet, heat 1 Tbsp vegetable oil over medium heat. Add minced garlic and grated ginger and sauté for 1 minute until fragrant.
  2. Whisk Sauce: Add the soy sauce, gochujang, maple syrup (or brown sugar), and rice vinegar to the pan. Whisk well to combine and bring to a gentle simmer.
  3. Thicken (Optional): If you prefer a thicker sauce, you can mix 1 tsp cornstarch with 1 Tbsp cold water and whisk it into the simmering sauce. Cook for another minute until thickened.
  4. Finish: Remove from heat and stir in the sesame oil.

Coat the Better Patty

  1. Add the cooked and cut Better Patty pieces to the saucepan with the Korean BBQ sauce.
  2. Toss gently until all the pieces are thoroughly coated in the rich, glossy sauce.

Assemble the Bowls

  1. Divide the cooked rice evenly among four serving bowls.
  2. Artfully arrange portions of the saucy Korean BBQ Better Patty alongside the rice.
  3. Fill the rest of the bowl with the fresh vegetables: shredded lettuce, cucumber slices, cherry tomato halves, thinly sliced red onion, shredded carrots, and avocado slices.
  4. Garnish generously with sesame seeds and chopped green onions.
  5. Serve immediately and enjoy the burst of flavours!
